Goose dinners, eel meals and well-supplied smorgasbord!
Inns and pubs are careful to preserve Scanian culinary traditions, coffeehouses
abound and the farm shops offer regional specialities, at excellent prices.
In Skåne, the passion for the good life is experienced at a well-laid
table.
A rich culinary culture has developed, over the centuries, in Skåne,
between Denmark and other parts of Sweden, enriched by impulses from all
directions and stimulated by the proximity between coast and countryside.
Food has always been an important part of Scanian living. The province
is well supplied with inns, pubs and farm shops bearing witness to this
tradition and just Malmö offers more restaurants per capita than any other
Swedish city. The quality and selection at the restaurants and hotels
dotting Skåne are reason enough for a visit.
The mild climate has created a situation where first-class raw materials
are readily available from farming, coastal fishing and the Scanian herb
gardens. Indeed, it isn't surprising that Skåne has become a centre for
gastronomy and the food industry. Many of the results can be bought right
in the farm shops out in the countryside.
Traditional
Scanian fare is food that has been prepared using Scanian raw materials,
and that has been enjoyed by generations, regardless of where the original
ideas came. The menu includes superb meat dishes from pork, beef, game
and fowl. The excellent Scanian eggs form a staple in many dishes. The
provincial table offers a plethora of vegetables, as well as local spices.
Herring, in various guises, is a natural ingredient in many classic dishes.
And for truly Scanian flavour, there is the pyramid cake, "spettkaka",
made using eggs and sugar.

Eel is the province fish, one that can be prepared in many ways. It's
fished along the coasts in October and November, mainly on the eastern
shore around Åhus. This is when the ålagillen or eel meals are arranged
with a profusion of dishes and a menu that either starts or finishes with
the ålasluringen or Scanian eel soup.
As you travel around Skåne, a visit to one of the coffeehouses is a must.
Provided are the delicious cake buffets, often presented in genuine farm
settings, in the midst of the Scanian countryside.
